Summer Vegetable Ratatouille
Ingredients:
- 1 eggplant, diced
- 2 zucchinis, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 2 medium tomatoes, diced
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons fresh basil, chopped
- Salt and pepper to taste
Instructions:
- Heat olive oil in a large pan over medium heat. Add the onion and cook until it's translucent, about 5 minutes.
- Add the garlic and cook for another minute.
- Add all the vegetables to the pan and stir to combine.
- Reduce the heat to low, cover the pan, and let it simmer for about 30 minutes. Stir occasionally.
- Season with salt, pepper, and basil just before serving. Enjoy this dish as is or with grilled chicken for additional protein.
