 Summer Vegetable Ratatouille

Ingredients:

  • 1 eggplant, diced
  • 2 zucchinis, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 2 medium tomatoes, diced
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons fresh basil, chopped
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a large pan over medium heat. Add the onion and cook until it's translucent, about 5 minutes.
  2. Add the garlic and cook for another minute.
  3. Add all the vegetables to the pan and stir to combine.
  4. Reduce the heat to low, cover the pan, and let it simmer for about 30 minutes. Stir occasionally.
  5. Season with salt, pepper, and basil just before serving. Enjoy this dish as is or with grilled chicken for additional protein.
