Peach and Blueberry Greek Yogurt Cake - diabetic friendly

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup almond flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup Greek yogurt
  • 1/2 cup granulated Stevia or another non-nutritive sweetener
  • 3 large eggs
  • Zest of 1 lemon
  • 1/2 teaspoon vanilla extract
  • 1/2 cup vegetable oil
  • 1 ripe peach, thinly sliced
  • 1 cup fresh blueberries

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In a medium bowl, whisk together the all-purpose flour, almond flour, baking powder, and salt.
  3. In a large bowl, beat together the Greek yogurt, sweetener, eggs, lemon zest, and vanilla extract.
  4. Slowly beat the dry ingredients into the wet ingredients. Beat in the vegetable oil.
  5. Pour the batter into the prepared pan. Top with the sliced peaches and blueberries.
  6. Bake for about 50 minutes, or until a toothpick comes out clean. Let cool before serving.
