Peach and Blueberry Greek Yogurt Cake - diabetic friendly
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup almond flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup Greek yogurt
- 1/2 cup granulated Stevia or another non-nutritive sweetener
- 3 large eggs
- Zest of 1 lemon
- 1/2 teaspoon vanilla extract
- 1/2 cup vegetable oil
- 1 ripe peach, thinly sliced
- 1 cup fresh blueberries
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
- In a medium bowl, whisk together the all-purpose flour, almond flour, baking powder, and salt.
- In a large bowl, beat together the Greek yogurt, sweetener, eggs, lemon zest, and vanilla extract.
- Slowly beat the dry ingredients into the wet ingredients. Beat in the vegetable oil.
- Pour the batter into the prepared pan. Top with the sliced peaches and blueberries.
- Bake for about 50 minutes, or until a toothpick comes out clean. Let cool before serving.
