Grilled Salmon with Avocado Salsa
Ingredients:
- 4 salmon fillets
- 1 tablespoon olive oil
- Salt and pepper to taste
- 2 ripe avocados, diced
- 1/2 red onion, finely chopped
- 1 jalapeno, seeded and minced
- Juice of 1 lime
- 1/4 cup chopped fresh cilantro
Instructions:
- Preheat your grill on medium-high heat.
- Rub the salmon fillets with olive oil, and season with salt and pepper.
- Grill the salmon for about 4-5 minutes on each side or until desired doneness.
- While the salmon is grilling, combine the avocado, red onion, jalapeno, lime juice, and cilantro in a bowl. Stir well to combine.
- Once the salmon is done, top each fillet with a generous spoonful of avocado salsa.
