Grilled Salmon with Avocado Salsa

Ingredients:

  • 4 salmon fillets
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 ripe avocados, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeno, seeded and minced
  • Juice of 1 lime
  • 1/4 cup chopped fresh cilantro

Instructions:

  1. Preheat your grill on medium-high heat.
  2. Rub the salmon fillets with olive oil, and season with salt and pepper.
  3. Grill the salmon for about 4-5 minutes on each side or until desired doneness.
  4. While the salmon is grilling, combine the avocado, red onion, jalapeno, lime juice, and cilantro in a bowl. Stir well to combine.
  5. Once the salmon is done, top each fillet with a generous spoonful of avocado salsa.
